My daughter Saee ( remember the Banana Chocochip Muffins) has agreed to "blog-sit" and write up a post for our Cook Like a Star-MasterChef blog-hop. She is 8 years old and already she has a passion for cooking and baking.Needless to say that she has tried out many recipes from the MasterChef Junior series. I have to restrict this "over-entusiastic" girl's "playing around" in the kitchen to weekends (otherwise I'll go mad...I mean it urrrghhh) what with her school, my college, her classes, my classes, her playing with her friends and me with mine...you get the drift :D. So I'll hand it over to her.

Hello! I am back with kidelicious bakes! so now I will show you how to make a chocolate layer cake.
The recipe is originally by Donna Hay for a four tier cake but I made a three tier cake :). the fourth layer got broken and of course, I tasted it :) .
Hope you all will make this cake because I really liked this chocolaty cake. If possible, dont eat the cake before frosting it so that you will have a four tier cake :).
Line 2 round tins with parchment paper
Breaking the eggs
Mixing it with buttermilk
Adding the chocolate mixture to the flour mixture
Whisking it all together
Pouring it into the tins
Ready to go into the oven

Ingredients
- 1/2 cup (125ml)water
- 60g butter, chopped
- 2 tablespoons cocoa, sifted
- 1 cup (150g) plain flour, sifted
- 1/2 teaspoon bicarbonate of soda, sifted
- 1 cup (220g) caster sugar
- 1 egg
- 1/4 cup (60ml) buttermilk
- 1/2 teaspoon vanilla extract
- chocolate cream cheese frosting
- 50g butter, softened
- 250g cream cheese
- 1 cup (160g) icing sugar mixture, sifted
- 1/4 cup (25g) cocoa, sifted
Method
1. Preheat oven to 175 degree Celsius. Line 2 12 cm round tins with parchment paper. - 2. Place the water, butter and cocoa in a saucepan over medium heat and stir until the butter has melted. Place the flour, bicarbonate of soda and sugar in a bowl, add the cocoa mixture and whisk to combine. Add the eggs, buttermilk and vanilla and whisk to combine. Divide mixture between 2 lightly greased 12cm round cake tins lined with non-stick baking paper. Bake for 40-45 minutes or until cooked when tested with a skewer. Allow to cool in the tins for 5 minutes. Turn out onto wire racks to cool completely.
3. While the cake is baking, make the cream cheese frosting. Place the butter and cheese in the bowl of an electric mixer and beat for 6–8 minutes or until pale and creamy. Add the icing sugar and cocoa and beat for a further 6–8 minutes or until light and fluffy.
4. To assemble, slice the cakes in half horizontally. Place one cake layer on a plate and spread with one quarter of the frosting. Repeat with remaining layers and frosting. Decorate as desired.
