Originally it was supposed to be a Strawberry Coffee Cake, but since it's August, it is impossible to get fresh strawberries in market and, I have run out of my frozen stash.
It is the Home Bakers' time of the month again and this time Alice from I Love. I Cook. I Bake, has selected this lovely bake for us from Lou Seibert Pappas' book Coffee Cakes.
As I said earlier, I couldn't get any strawberries so I substituted it with blueberries and the resulting cake was the most moist and luscious cake I have ever had. And you know what, the cake's cream cheese and berry-laden texture and taste is so good that it doesn't matter which berries you are using, may it be strawberries or blueberries or blackberries or a mix, just make sure to use full measure given, i.e., 3 cups ( close to 450 grams), the more the merrier.
Warm out of the oven
Sliced into squares and ready to serve..yum yum
Incidentally, we have made Apple Cinnamon Tea Cake in our baking class last week. Only difference being, we didn't use any cream cheese in our batter and we used apples (of course), as the name suggests. But the principle remains same, we made our batter and filling separately, poured half the batter in the pan, layered with filling, poured the remaining batter and lastly topped with nuts before popping it into the oven.
