Sun-Dried Tomato-Pistachio Polenta Cake

It's our Home Bakers' time of the month and this time Yvette from My Worldwide Culinary Adventure has selected a savory bake for us.



The Home Bakers is a group of like-minded passionate bakers and we love collecting cookbooks! At THB, we will bake from one cookbook only, until every recipe has been baked. This will not only fully utilized your cookbook to the maximum, but it will widen your baking skills, and learn more about baking as we share our experiences together.

Currently we are baking from "Coffee Cakes" by Lou Seibert Pappas, who has written more than 50 cookbooks. "Coffee Cakes" is a beautiful cookbook with various bakes covering Sunday Brunch Cakes, Everyday Morning Cakes, Savory Picnic Cakes, Bundt Party Cakes and Delectable Dessert Cakes, a total of 60 wonderful recipes. Since then we have made Cheese Swirled Chocolate Bundt CakeApricot Pistachio Lemon Coffee Cake, Blueberry Streusel Coffee Cake, Pear Pinwheel and Hazelnut Cake, Almond Crusted Butter Cake, Mocha Cappuccino Marbled Coffee Cake, Blueberry Coffee Cake and this is our 8th bake Sun-Dried Tomato-Pistacho Polenta Cake.


Lou Seibert Pappas describes this herbed bread as,
This savory tomato herb bread has a delicious polenta and nut crunch in each golden slice. Nicely moist, with a fine, crumbly texture, it is excellent warm or cold. Serve it for an Italian-style brunch, lunch, or buffet party. It is also an ideal complement to a Caesar salad or a lentil or bean soup for a light meal.
 I was really looking forward to this bake as this is our first savory bake from this book. Sadly, I have to admit, I was kind of disappointed from the result. I followed the exact instructions from the book but the cake didnt turn out as expected.

Taste-wise also it was nothing spectacular. Maybe a little more cheese would've helped. Probably won't be making this one again.
