Peach and Walnut Bread and an Announcement!!

Peaches are one of the most versatile fruits around! You can use them in desserts, ice creams, jams and jellies. You can dry them and eat them like candy. You can make preserves and even chutneys and serve them over a grilled dish OR you can grill the peaches. Yup, stick them right on the grill and let them get all nice and cozy with the flames and serve them with a nice scoop of vanilla ice cream.


This Peach and Walnut bread is a winner though. And it's probably a good idea for you to make it in the next few weeks while peaches are still around.


In order to make your life extra simple when making this bread, you are going to need to blanch the peaches in boiling water for a minute or half in order to remove the skin. After a minute or so remove the peaches from the hot water and dunk them in cold water. The skin will come off smoothly. Eezy-peezy.


Once the skin is removed, core them and chop roughly in cubes. Exact size of the cubes doesn't matter. I find that giving them to your 8 year old for chopping and slicing gives best results :D. In fact those big chunks in your bread are going to be the tastiest bit.

The theme for September 2012 is MasterChef. To join simply cook or bake any recipe from any Masterchef website or cook books and it's not country specific (I m SO going to try out MasterChef India recipes). Blog hop with us for the whole month of September 2012.



Peach and Walnut Bread
Ingredients:
135 grams unsalted butter, room temperature
200 grams caster sugar
2 eggs
1 teaspoon vanilla extract
225 grams all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
pinch of salt
3 peaches, peeled, cored and cubed
100 grams walnuts, coarsely chopped
1/4 cup (60 ml) milk (approximately)

Method:
Preheat the oven to 160 degree Celsius. Butter a 9 inch loaf pan. Keep aside.
In a large bowl, cream the butter and sugar until light and fluffy. Add one egg at a time and beat well after each addition. Beat in the vanilla extract.
In a separate bowl, mix the flour, baking powder, baking soda and salt. Add the sliced peaches and walnuts to this mixture.
Fold in the flour mixture in the butter and eggs mixture. Add the milk to the batter until you achieve a dropping consistency (if you lift your spatula, the batter should fall back into the bowl without any efforts on your part).
Spoon this mixture into the prepared loaf pan and bake for 1 hour or until a toothpick inserted into the centre of the loaf comes out clean.. It might take a little more or less to bake depending upon the consistency of your batter.
Remove from the oven and leave it in the pan for 10 minutes. Unmold it after ten minutes on a cooling rack and cool completely. Slice and serve with a hot cup of tea or coffee.
