Cola Baked Chicken

My family love their chicken with a Chinese twist! And Matt Preston's recipe is the easiest way to achieve this. How can you not love a recipe with such a simple list of ingredients!! I just love the simplicity of this recipe and would love to try out more of Mr.Preston's "budget" cooking. and yup he is the one who came up with the "one ingredient" ice cream, Black Banana Ice cream, of which we've already had around 3 to 4 entries in our Cook Like a Star - Masterchef blog hop event.


You just need to be patient with this one as it takes a looooooong cooking time, around 3.5 to 4 hours, but be patient, take out a bottle of wine, watch crappy t.v, as your sauce needs that much time to reduce without burning out and drying out the chicken.And in the end, the wait is TOTALLY worth it!!


I had drumsticks in my fridge, so I used them instead of the wings. Also, you don't need the 750ml of cola specified in the recipe, as more the liquid, more time it will take to caramelize. I also reduced the sugar as we don't like our chicken tasting like a dessert :D. Added red chilli powder and a teaspoon of salt and voila my sticky drumsticks are ready.

Cola Baked Chicken

Ingredients

750 ml Coca Cola ( I used 450 ml)
1 cup firmly packed brown sugar (I used 1/4 cup) 
3 cloves garlic, grated 
1 large brown onion, grated 
2 tablespoons soy sauce 
1kg chicken wings, cut at the joints ( I used chicken drumsticks) 
Juice of one lemon
1 teaspoon red chilli powder
salt to taste

Method:

Preheat oven to 160 degree Celsius. Combine cola, sugar, garlic, onion, lemon juice, red chilli powder, salt and soy in a bowl. Arrange chicken wings in a single layer in a deep oven tray and pour over cola mixture. Bake for 3-3.5 hours or until sauce is thick and very sticky.
